MY PACKER THEMED UDS BUILD
So who am I? Just a regular Joe (or Keith) for this matter, who has a passion for great BBQ and wants to get his gloves dirty and commence to smoking.
I have always wanted to see if I could make pulled pork that rivals the hot shots on TV. Well once the kids went off to college and the empty nest days began, I decided to give it a try.
I first started by using my weber kettle grill to smoke a pork butt. Not the easiest thing to do but it wasn't half bad. I was contacted by my brother in law "Pig Al" who has some expertise in the field of competitive BBQ. He suggested I start by building a "UDS" seen in the photos to the right. An Ugly Drum Smoker is very popular, very cheap and easy to control temperature for a long period of time.
So once the build was complete, I started smoking all the classics pork butt, brisket, ribs, etc.... and haven't looked back.
You might be wondering what's behind the name. Well in the BBQ world the nice mahogany color you see on meat after a smoke is affectionately referred to as the "bark". Hence the play on words.
